It’s one day after Christmas
I’m crabby and I’m broke.
I’m so full of ham and fruitcake
I think I’m gonna croak.
It’s nice to see the relatives
I wonder when they’ll leave.
They’ve been camping in my bathroom
since early Christmas Eve.
They’re eating everything in sight
and sleeping in my bed.
I’ve been sacked out in the basement
with my spotted beagle, Fred.
The relatives have all gone out
and left their screaming brats.
The toilet bowl is all plugged up
and I can’t find the cat.
It’s Christmastime at my house,
the relatives are here.
They eat me out of house and home.
and drink up all my beer.
I love the decorations,
and the sleigh bells in the snow
But I wish those pesky relatives
would take their kids and go.
Those cookie crunchers fed the dog
a twenty pound rib of roast.
His feet are sticking in the air
like skinny old fence posts.
Now they’re in a free-for-all,
the girls against the boys.
They’re fighting over boxes
’cause they’re bored with all their toys
My mother-in-law is snoring
in my favorite TV chair.
Those kids are stringing lights on her
and tinseling her hair
I oughta wake her up
before the fireworks begin.
But I wanna see those blue sparks fly
when they plug her in.

This recipe is just what its name says. Teeny tiny little versions of the Reuben Sandwich.
Thinking Ahead To New Year’s Eve
Today’s recipe can be used in many ways. This recipe can also be varied a dozen different ways.
One, I am sharing it with you as an idea for News Year’s Eve festivities and New Year’s day football game snacks.
Use Up Christmas Leftovers
But you also can use this recipe to use up any leftovers you may have from Christmas festivities.
For instance, if you have leftover ham, use a ham slice in place of the corned beef, dressing, and sauerkraut. Then add a pineapple chunk and a half a maraschino cherry instead of sauerkraut on top. Voilà!!! Instant classic your family will love.
Or if you have leftover turkey, add a slice of turkey in place of the corned beef. Again leave off the dressing (or add another of your choosing) and the sauerkraut. Then top it with some cranberry sauce, and again, Voilà!!! Another super mini-sandwich.
To make a complete meal or dinner of these tiny sandwiches just add a salad and/or some soup and you have another great meal instead of party food.
This is what you will need for about 15 Sandwiches:
NOTE: Except for the corned beef these amounts are approximate as I have never had to measure before. I just assemble them and use what I need to use..
¼ pound Corned beef
15 slices of Cocktail Rye Bread
About 6-8 ounces sauerkraut
About 4-6 ounces shredded Swiss cheese*
About ¼ to 1/3 cup 1000 Island Dressing
*NOTE: I had sliced Swiss in my fridge. So I used part of that up. I used a bit less than 3 slices.
Here is what you do:
Turn your oven on to 350 degrees.
If necessary like it was for me, slice your cheese by first cutting into thin strips………….
…..and then cut the strips into a small dice. If using store bought shredded cheese just put some in a small bowl. I am just a stickler for using up what is already in the fridge. Waste not; want not. Frugal cooking and all that.
Next just set up for an assembly line. And by the way, this is a great recipe to get your children involved in helping out. There is [usually] no cutting or chopping.
Place the bread on a baking sheet.
Add the corned beef. I just tear it into bite size pieces.
Add about a teaspoon of dressing.
Add some sauerkraut.
Add the cheese.
Place in the oven for about 8-10 minutes or until the cheese starts to melt. I start checking around the 6 minute mark. .
Remove from the oven.
On a platter ready to serve, eat, and enjoy.
Close up. Chomp…….. I ate one. OK it was reallytwo!!! I simply cannot control myself. They are that good!!!

I HAVE A CONFESSION TO MAKE: I could have made about 3 or 4 more mini-Reubens. I had more corned beef left. But I ate it while these were heating in the oven. Boy! It sure feels good to get that off my conscious!
